Katy's Sweet Potato Crunch

Katy's Sweet Potato Crunch is one of the best recipes for sweet potato casserole I have found. Katy (Mom) always made this Thanksgiving recipe and I have continued the tradition. Forget the marshmallow stuff this is much better. But don't wait till the holidays to try it.

3 cups sweet potatoes (I use canned)
½ cup sugar
½ tsp salt
½ stick butter
2 eggs
½ cup milk
2 Tbsp vanilla

Mix together and spread in 9” x 13” casserole dish.

Topping:
1 cup brown sugar
1/3 cup flour
½ stick butter melted
1 cup chopped pecans

Mix together & spread on top of potato mixture. Cook 30 – 45 minutes in 350 degree oven or until bubbly.
