Sweet and Pungent Franks

Sweet and Pungent Franks is a recipe I grew up with. Only my Mom could come up with a recipe so economical. She always served it over egg noodles.

2 T vegetable oil
1 lb franks cut into 1 inch pieces (cut on the diagonal if you want to get fancy)
2 med. Green peppers cut into strips
½ cup sliced onion
1 ½ cups cold water
1 chicken bouillon cube
¼ cup sugar
¼ cup cider vinegar
2 T soy sauce
¼ t ground ginger
3 T cornstarch
Cooked rice or noodles

In large skillet heat oil & cook franks, green pepper & onion until vegetables are crisp tender stirring frequently. Reduce heat slightly & stir in 1 cup of the water, bouillon cube, sugar, vinegar, soy sauce & ginger. Blend & bring to boil. Mix cornstarch & ½ cup water & blend until smooth. Stir into hot mixture. Cook stirring until mixture is clear & thickened. Serve with rice or noodles.
