Rice and Artichoke Salad

Rice and Artichoke Salad is a recipe that was served at my niece's wedding and the caterer gave the recipe to her as a gift. Our family has since enjoyed this delicious recipe several times since. It is elegant, yet simple enough to serve anytime. It is served cold making it a great dish to take to picnics, potluck dinners or brunch.

1 cup uncooked rice
2 cups chicken broth
¼ cup diced green onion
¼ cup diced green pepper
¼ cup pimento stuffed green olives, sliced
1 jar marinated artichoke hearts
½ tsp. Curry powder
1/3 cup mayonaise

Cook rice in broth. Let cool. Add onion, peppers, olives. Drain artichoke hearts reserving marinade. Cut artichokes into bite size pieces. Add to rice mixture. In separate bowl combine: curry powder, mayonnaise & reserved marinade. Toss with rice mixture & chill.
