Red Cake
Red Cake is a fabulous cake to make for the holidays, Valentine's Day or anytime you need a great dessert. Are your school colors red & white? Make it for your next tailgate party.
¾ cup shortening
1 ½ cup sugar
2eggs
2 oz. red food coloring
1 Tbsp vanilla
1 tsp. salt
1 tsp vinegar
1 Tbsp Nestles Quick
2 ½ cups cake flour
1 tsp. baking soda
1 cup buttermilk
Cream together shortening, sugar and eggs until you cannot feel sugar grains. Add food coloring, vanilla, salt, vinegar & Nestles Quick. Sift together in separate bowl: cake flour & baking soda. Alternate adding flour & buttermilk to mixture. Bake in 2 greased & floured 9” pans 45 minutes at 350 degrees. Cool completely before frosting.
Frosting:
5 Tbsp. flour
1 cup milk
1 cup margarine
1 cup sugar
1 tsp vanilla
Cook flour & milk mixture in pan over moderate heat until thick. Set aside to cool. Cream together: margarine, sugar & vanilla about 15 minutes until light. When it looks like whipped cream add cooled flour mixture by small spoonfuls. Beat until consistency of whipped cream. Frost between layers, top & sides of cooled cake.
