Quesadillas
Quesadillas is a great Mexican recipe that can be used for an appetizer or a main dish.
1 T Butter or margarine
1 Onion – sliced & separated into rings
Bell pepper sliced – I use green and red
Diced cooked chicken
Colby jack cheese shredded
Bacon slices cooked & crumbled
Jalapeno diced fine (or can green chilis
Flour tortillas
In non-stick skillet or on griddle melt butter & sauté onion and bell pepper (I like the onions caramelized). Remove from pan. Put tortilla on griddle or skillet, add cooked vegetables, chicken, cheese & bacon bits to half the tortilla. Fold tortilla in half. When bottom begins to brown flip quesadilla over & brown on other side. Remove & cut into wedges. Serve with salsa, shredded lettuce, diced tomato, guacamole & sour cream. Vary the ingredients based on your preferences.
I have served this as a main course with rice and refried beans.
