Aunt Bobbie's Potato Casserole

Aunt Bobbie's Potato Casserole has been taken to many family gatherings and Church dinners, and I never bring home left overs. This recipe is so versatile and basic it goes with almost everything.

3 cups cooked cubed potatoes
1 onion finely chopped
3 T diced green pepper
3 T diced celery
4 T butter
2 ½ Tbsp flour (that’s 2 T plus 1 ½ t)
2 cups milk
2 T pimento
¾ cup shredded cheddar cheese
Salt & Pepper to taste

Cook onion, green peppers & celery in butter. Stir in flour & gradually add milk & cheese reserving some for the top. Add potatoes & pimento. Put in 1 ½ quart greased casserole dish. Top with remaining cheese. Bake at 350 degrees for 30 minutes. Recipe can be doubled & put in 3 quart dish.
