Poached Pears with Raspberry Sauce
Poached Pears with Raspberry Sauceis very light, healthy, and has an elegant presentation! I made this one up myself.
1 Tbsp. butter
2 Tbsp. brown sugar
1/2 tsp. vanilla
1/2 tsp. cinnamon
1 cup frozen raspberries
1 Tbsp water or juice (depending on berries you may not need this)
3 to 4 pears (one per person)
whipped cream or frozen whipped topping
Place first 6 ingredients in large saucepan over medium low heat until sugar is dissolved, butter is melted and raspberries thawed. Peel & core pears from bottom leaving stem in place. (Pears will turn brown quickly so place in pan as soon as it is peeled.) Place upright in raspberry mixture and cover with lid. Cook about 10 minutes on low basting with sauce. Serve warm with whipped cream.
