Pinto Beans with Ham
Pinto Beans with Ham is a great recipe as a main dish or it can also be used as a side dish. I always fix this recipe the day after I cook a bone in ham. Never waste a good ham bone. Great northern or other beans can also be substituted.
2 cups dried beans
Ham bone with ham scraps
Pepper to taste
Wash & sort beans (that means throw out the stones that sometimes slip in). I never soak overnight - I use the quick method; cover with lots of water (about 8 cups) & bring to a boil for 10 minutes. Reduce heat. Add ham bone & whatever ham you have left over. Usually the ham provides enough salt, but you be the judge. Add pepper. Simmer for 3 to 4 hours checking often to see if there is enough liquid. If the beans are too thin for your taste bring to a boil again. You can remove about ½ cup beans, mash them & add back to the pot if you like them thicker.
