Old West Bean Pot
Old West Bean Pot is a quick and easy recipe since it uses canned beans instead of dried. It is just as good cooked in a Dutch oven over hot coals or stove top or baked in the oven in a casserole dish. This makes it a perfect recipe for camping, picnicing, or tailgating.
1 16 oz can baked beans
1 15 oz can kidney beans
1 15 oz can navy, great northern, or pinto beans
1 cup chopped green pepper
1T oil
1 16 oz can diced tomatoes
1 T chilli powder
1 t garlic salt
1 small finely diced onion
½ cup cheddar cheese grated
Dash paprika+
Saute onion & green pepper in oil. Combine beans, pepper, tomatoes, and seasoning in Dutch oven or 2 qt casserole. Sprinkle with cheese & paprika. Cook over hot coals, or bake in 350 degree oven (if using casserole dish) 30 minutes until hot and bubbly.
