Okra and Tomatoes
Okra and Tomatoes is a favorite recipe of mine for canning (increase the quantities proportionately). Don't try this one in the winter with store bought tomatoes (yuk) it just won't be the same. Use canned tomatoes instead. This easy recipe can be used as a side dish or a soup depending on the juice in the tomatoes. For a thicker consistancy cook longer to evaporate some of the liquid.
To turn this recipe into a main course, add chicken, smoked sausage (kielbasa), or shrimp and serve over rice for a delicious gumbo.
1 large onion diced
1 green bell pepper diced
1 red bell pepper diced
1 Tbsp vegetable oil
2 lbs okra, washed & cut in ˝ inch slices
3 lbs fresh tomatoes, peeled & diced (diced canned tomatoes may be substituted)
1 tsp salt
˝ tsp fresh ground black pepper
In large stockpot sauté onion & peppers in oil. Add remaining ingredients & cook bring to boil. Lower heat & simmer 30 minutes to blend flavors. I can this mixture. Use hot pack method for canned tomatoes.
