New Potato Salad
I developed this New Potato Salad recipe after eating some at a local deli. It was so good but the place was waaay across town so I knew I had to learn to make it myself. The ingredients are few and simple which allows all the flavor to shine through. The fresh parsley adds the perfect touch so don't scrimp and use dried...it won't be as good.
2 lbs new (red) potatoes, washed, cut in 1 inch pieces - skin on
¼ cup diced green onion
¼ cup fresh minced parsley
1 tsp salt
½ tsp fresh ground pepper
2/3 cup mayonnaise
Mix all ingredients together & chill until time to serve.
