Lemon Bars
Serve Lemon Bars at your next luncheon, picnic, or after a family dinner. This recipe has the perfect balance of tart and sweet.
1 egg
1/3 cup butter or margarine softened
1 box lemon cake mix
2 eggs
1 cup sugar
½ tsp baking powder
¼ tsp salt
2 tsp lemon zest
¼ cup lemon juice
Confectioners’ sugar
Preheat oven to 350 degrees. Mix 1 egg, butter and cake mix until crumbly. Reserve 1 cup mixture. Pat remaining mixture lightly in ungreased 9 x 13 pan. Bake about 15 minutes or until light brown. Beat 2 eggs and next 5 ingredients with mixer until light and foamy. Pour over hot crust; sprinkle with reserved crumb mixture. Bake about 15 minutes or until light brown. Cool. Sprinkle with confectioners’ sugar & cut into bars.
Note: To make orange bars, substitute lemon cake mix for orange cake mix, and use orange juice and orange zest.
