Grilled Veggies
Grilled Veggies has become a staple at our house. I love the ease of grilling the meat and vegetables at the same time. No pots and pans to wash! This recipe is great for camping, picnics, or backyard barbecues.
2 medium yellow squash cut in 1 inch slices
2 medium zucchini cut in 1 inch slices
1 green bell pepper cut in strips
1 red bell pepper cut in strips
1 onion cut in ¼ inch slices & separated into rings
¼ cup (1/2 stick) margarine
1 tsp dried basil
1 tsp dried oregano
Salt & Pepper to taste
Melt butter & add herbs. Pour over vegetables. Put heavy-duty aluminum foil on grill grate. Pierce small holes in foil with fork. Grill vegetables over medium heat turning often. I grill our meat on one side of the grill & use the other for the vegetables.
