Ginger Glazed Carrots
The combination of ginger and honey make Ginger Glazed Carrots a vegetable recipe so good you will use it again and again. I have served it for Thanksgiving dinner (turkey) and it is also a great compliment to beef and pork dishes. Try this side dish and kick your dinner up a notch.
3 lb pkg. baby carrots
6 cups water
¾ t salt
2 T butter
2 T honey
1 T finely minced fresh ginger root (peel first)
In large stockpot add carrots, water & salt. Bring to boil. Reduce heat & simmer 10 minutes or until tender. Drain well in colander. In same pan combine butter, honey and ginger & stir over medium heat until butter melts. Add carrots & toss to coat.
