Fried Rice
Try Fried Rice with all your favorite asian dishes...it is better than take-out. This easy recipe goes great with stir fried vegetables and chicken or beef. If you are going camping, cook the rice at home and take it in a plastic container. This will cut your prep time in half.
4 cups cooked rice
6 strips bacon
1 can mushroom pieces & stems
2 Tbsp soy sauce
1 egg well beaten
2 Tbsp chopped green onion
Cook bacon in skillet. Remove bacon leaving fat in pan. Saute onion in bacon drippings until tender. Add rice, mushrooms (including liquid) & soy sauce. Stir fry 5 minutes. Crumble bacon & add to mixture. Add egg stirring constantly. Cook additional 3 minutes. Serve.
