Mom's Fried Fish Recipe



Here's Mom's fried fish recipe as promised. This really brings back memories of family fish fries after a day of fishing for crappie.

This fish recipe works well either in a deep frier or in a skillet. If frying in the skillet, make sure to have about 1/2 inch of oil to cover fish.

Ingredients:

Fish fillets
Vegetable oil (Mom always used peanut oil)
1-1/2 cup Bisquick
1/2 cup plain cornmeal
1 egg
can of beer
salt
pepper

Place fillets in cold water (I referigerate) until ready to fry. Remove from water & pat dry with paper towels. Salt & pepper fillets. In bowl mix bisquick, cornmeal, and egg. Add beer until mixture is the consistency of pancake batter. Dredge fillets into mixture and add slowly to hot oil. Fish will cook in just a few minutes. If cooking in skillet turn once to get brown & crispy on both sides. YUM!

We always made home-made french fries when cooking in our outdoor frier. Cook the fries first, then the fish (so they won't taste fishy).

Now I'm hungry...I'll have to send my husband fishing. Won't he hate that!
