Colorful Vegetable Salad

I have served Colorful Vegetable Salad several times at dinner parties and have taken it with us when we went camping. It is one of those recipes that makes a lot, and is better the longer it marinates. This easy recipe will compliment almost any main dish.

2T sugar
1/4 cup cider vinegar
1/4 cup vegetable oil
1/2 t salt
1/2 t paprika
1 can green beans, drained
1 can black-eyed peas, drained
1 can small green peas or 1 1/2 cup frozen peas thawed
¼ cup diced red pepper
½ cup diced green onion
1 can corn drained, or 1 ½ cup frozen corn thawed
¼ cup diced green pepper
12 cup diced celery

Bring first 5 ingredients to a boil in a saucepan over medium heat. Stir often until sugar dissolves. Let cool 30 minutes. Stir together remaining ingredients in a large bowl. Pour dressing over veggies & stir gently. Cover & chill overnight. Serve cold.
