Granny Blanche's Cole Slaw

Granny Blanche's Cole Slaw recipe has been a family secret for years...well the secret is out. We all loved Granny so much, but it was hard to get a recipe out of her...mostly because she rarely used one. I watched her make this and wrote down what she did. It took three of us in the family comparing notes to get this one right. It is a little more effort but so worth it. This is nothing like what you get at the deli counter. Try this at your next barbecue.

¾ cup vinegar ¾ cup sugar
2 T flour
2 eggs beaten
½ stick butter or margarine
½ t salt
pepper to taste
2 t dry mustard
½ cup mayonnaise
Shredded cabbage
Grated carrots(I use bagged cole slaw mix)

In saucepan melt butter & add vinegar, sugar, flour, salt, pepper & dry mustard. Stir with whisk while cooking over medium heat till sugar melts. Reduce heat to simmer & add eggs stirring constantly till well blended. Remove from heat & cool. Fold in mayonnaise. Pour over cabbage & carrots & stir. Add just enough dressing to lightly coat cabbage. Refrigerate until time to serve.
