Cocktail Meatballs
Cocktail Meatballs is a recipe that my Mom used to make and I loved it even as a child. I am not sure what the significance of the name is...we never had "cocktail parties". I just know this one is really good. I used to be the one that got to crush the cornflakes in a baggie with a rolling pin...that brings back memories.
2 lbs ground beef
1 cup cornflake crumbs
1/3 cup parsley
2 eggs
2 Tbsp. soy sauce
¼ teaspoon pepper
½ teaspoon garlic powder
1/3 cup ketchup
2 Tbsp minced onion
1- 12 oz. bottle Chilli sauce
1 16 oz. can cranberry sauce
2 Tbsp. brown sugar
1 Tbsp. lemon juice
Combine first 9 ingredients. Make meatballs about the size of a walnut. Place in 3 quart baking dish. Cook remaining ingredients in saucepan over medium heat until cranberry sauce melts & sugar dissolves. Pour over meatballs. Bake uncovered 30 minutes at 350 degrees. This could also be done in a slow cooker or dutch oven. Increase cooking time accordingly. Don't forget the fancy toothpicks!
