Black-Eyed Pea and Black Bean Salsa

Black-Eyed Pea and Black Bean Salsa is a real crowd pleaser, and it's healthy! A guilt free snack, what could be better.

2 cans blackeye peas (drained)
1 can black beans (drained & rinsed)
2 tomatoes chopped
1 can green chilis
½ cup fresh cilantro
4 green onions sliced
½ cup onion
½ cup green pepper (I prefer red pepper – use what you have)
8 oz Italian dressing*
juice of 1/2 lime

Mix all ingredients together. Chill several hours. Can be made ahead – it gets better the next day. I like to take it out of the refrigerator at least a half hour before serving, this lets the oil in the dressing get back to its original consistancy. Serve with tortilla chips (works great with Scoops).

*Use your favorite bottled Italian dressing, or make your own. I have used the Good Seasons that you mix yourself and bottled dressing. Both work well.
