Beef Pot Roast
I make this in my crock-pot
2 to 3 potatoes, pared & cubed
2 to 3 carrots peeled & sliced (I use whole baby carrots)
1 to 2 onions, peeled, quartered & broken apart
1 t salt
dash garlic salt
¼ t pepper
3 to 4 pound roast (I usually use chuck)
½ cup beef broth (I use a whole can, makes lots of gravy)
2 to 3 bay leaves
Put vegetables in bottom of crock-pot. Sprinkle salt, garlic salt & pepper on meat. Add liquid to vegetables & place meat on top. Put bay leaves on top of meat. Cook on high 5 to 6 hours (or low 10 to 12 hours). Remove meat & vegetables. Thicken liquid with mixture of flour & broth or water to make gravy. It will probably take at least ¼ cup flour since there is a lot of liquid. This is a great one-pot meal.
